Tartaric Acid is a naturally occurring dicarboxylic acid with the chemical formula C₄H₆O₆. Its systematic name is 2,3-dihydroxybutanedioic acid . It appears as colorless or white crystalline powder, is odorless, and has an extremely tart taste . It is highly soluble in water.

A notable aspect of tartaric acid is its stereochemistry—it has three stereoisomeric forms: dextrorotatory (D-tartaric acid, found in grapes), levorotatory (L-tartaric acid), and meso-tartaric acid. An equal mixture of D and L forms is known as racemic tartaric acid .

Main Applications:

  1. Food & Beverage Industry: Used as an acidulant in soft drinks, candies, baked goods, and baking powder. In winemaking, it adjusts acidity and stabilizes wine. It is also the acid component in effervescent tablets .

  2. Pharmaceuticals: Serves as an excipient in effervescent formulations and can form salts/cocrystals with active ingredients to improve solubility. L-tartaric acid exhibits antimicrobial, antidiabetic, and antihypertensive properties .

  3. Chemical & Industrial Applications: Functions as a metal complexing agent for cleaning and electroplating. Rochelle salt (potassium sodium tartrate) is used in electronics due to its piezoelectric properties; tartar emetic is used in medicine .

  4. Advanced Materials & Research: Used as a chiral resolving agent for racemic amines, as a chiral ligand in asymmetric synthesis, for modifying graphene oxide, and improving metal coatings .

  5. Cosmetics: Incorporated into skincare products for its antioxidant and pH-adjusting properties
