Fumaric Acid is a naturally occurring organic acid widely found in various plants (such as corydalis and mushrooms) and lichens. It appears as a white crystalline powder with a refreshing sour taste (its acidity is approximately 1.5 times that of citric acid). It is slightly soluble in cold water but readily soluble in hot water and alcohol. As an intermediate product of the tricarboxylic acid (TCA) cycle in living organisms, fumaric acid has low toxicity and high safety, and is approved as a food additive by the U.S. FDA and the European Union.

Food & Beverage Industry:
Acidulant: Provides a tart, refreshing taste (1.5x stronger than citric acid) without absorbing moisture, ideal for dry beverages, jellies, baked goods, and processed meats.
Preservative: Undissociated molecules inhibit molds and bacteria (e.g., Salmonella, Listeria), extending shelf life of bread, cheese, and tortillas.
Leavening Agent: Acts as an acid component in baking powder and self-rising flour, reacting with sodium bicarbonate to release CO₂.
Flavor Enhancer: Adjusts acidity and enhances fruity notes in juices and wines.
Animal Feed Additive:
Used as a non-antibiotic growth promoter in piglet, poultry, and aquatic feed. Lowers gastrointestinal pH, suppresses pathogens (e.g., E. coli, Salmonella), activates digestive enzymes, and prevents diarrhea.
Pharmaceutical Industry:
Active ingredient in prescription drugs for psoriasis (fumaric acid esters, e.g., dimethyl fumarate) and multiple sclerosis.
Intermediate in synthesizing anti-anemia and anti-tumor agents.
Chemical & Materials Industry:
Unsaturated Polyester Resins (UPR): Competes with maleic anhydride to produce fiberglass-reinforced plastics, marine coatings, and auto parts with improved water resistance and mechanical strength.
Paper Sizing Agents: Improves water resistance of paper.
Others: Intermediate for surfactants, epoxy resin curing agent, and production of plasticizers (e.g., dibutyl fumarate).
