Citric Acid is a weak organic tricarboxylic acid with the chemical formula C₆H₈O₇. Its IUPAC name is 2-Hydroxypropane-1,2,3-tricarboxylic acid. It appears as a colorless, translucent crystalline powder or white granules, is odorless, and has a strong acidic (sour) taste.

Citric acid exists naturally in high concentrations in citrus fruits such as lemons and limes, which can contain up to 8% citric acid by dry weight. It was first isolated from lemons, but today it is primarily produced industrially by fermenting carbohydrate sources like sugarcane, molasses, or corn starch using the fungus Aspergillus niger

Main Functions in Food & Beverage:

  3. Acts as a Preservative – Lowers pH to inhibit bacteria and mold, extending shelf life (e.g., in canned foods and sauces).

  4. Regulates pH – Stabilizes acidity to ensure consistent product quality.

  5. Prevents Oxidation – Chelates metal ions to prevent rancidity and discoloration in fatty or fruit-based products.

  6. Effervescent Agent – Reacts with baking soda to produce bubbles in effervescent tablets and powders.

Applications in other area,

3. Industrial Cleaning: Used as a descaling and water-softening agent to remove limescale and rust.
