Calcium Propionate is the calcium salt of propionic acid, commonly used as a food preservative (E282). It appears as a white, crystalline powder with a mild smell. Its main function is to inhibit the growth of mold and rope-forming bacteria in baked goods such as bread, cakes, and tortillas. Importantly, it does not interfere with yeast activity at typical usage levels, making it ideal for leavened products. It is also added to cheese, jams, and animal feed. Calcium Propionate works by lowering the pH inside microbial cells. It is considered safe (GRAS) and is approved for use in many countries worldwide.
