Sucralose is a zero-calorie, high-intensity artificial sweetener. It is a chlorinated derivative of sucrose (table sugar) and is approximately 600 times sweeter than sugar

Key Characteristics:

  • Sugar-like Taste: Sucralose has a clean, sweet taste profile very similar to sucrose, without the bitter aftertaste associated with many other artificial sweeteners .

  • Heat Stability: Unlike some other high-intensity sweeteners (e.g., aspartame), sucralose is exceptionally stable at high temperatures. It does not break down or lose its sweetness during cooking, baking, or heat sterilization processes .

  • Zero Calories: The human body does not metabolize sucralose. Approximately 85% of ingested sucralose is not absorbed and is excreted unchanged in feces. The small amount that is absorbed is quickly excreted in urine, contributing no caloric energy .

  • Long Shelf Life: Sucralose is stable over a wide range of pH and temperature conditions, providing products with a long shelf life without sweetness degradation 

Applications:

Sucralose is one of the most versatile high-intensity sweeteners available. Its exceptional heat and pH stability, combined with its sugar-like taste, make it suitable for a vast range of food, beverage, and pharmaceutical products

Used as a non-nutritive sweetener to replace sugar (sucrose), reduce calories, and/or enhance flavor in a wide variety of products, including those requiring high-temperature processing
