Monosodium Glutamate (MSG) is the sodium salt of glutamic acid, a naturally occurring non-essential amino acid. It appears as a white, odorless crystalline powder that is readily soluble in water.

Natural Occurrence: Glutamate is naturally present in many foods, including tomatoes, cheese (especially Parmesan), mushrooms, seaweed, meat, fish, and human breast milk. It is one of the most abundant amino acids in nature.

Production Method: Today, MSG is produced through fermentation of natural raw materials such as starch, sugar beets, sugar cane, or molasses. This fermentation process is similar to that used to produce yogurt, vinegar, and wine.

Applications:

Primary Function: Flavor enhancer that intensifies and amplifies umami (savory) taste.

  • Supplementation of 2 mg MSG per kg of feed in broiler chickens has been shown to increase body weight gain and improve feed conversion ratio (FCR), while increasing beneficial lactic acid bacteria counts

  • MSG administered in drinking water (up to 5g/L) improved feed intake and daily weight gain

  • MSG is also available as Residue of monosodium glutamate (32% protein) – a protein-rich byproduct used as an affordable feed ingredient for livestock and poultry, typically included at 1-5% of animal diets
